Israeli Summer Salad

A perfect choice for any summer menu, this traditional salad is made with the freshest ingredients.  


  • 2 large tomatoes, chopped
  • 2 cumbers, peeled and chopped
  • 1 green bell pepper, chopped
  • ¼ cup fresh parsley, chopped
  • 1 small sweet onion, diced fine
  • 1 tablespoon fresh lemon juice
  • 4 tablespoons olive oil
  • Salt to taste


  1. Combine the vegetables in a large mixing bowl.
  2. In a small bowl, combine the lemon juice, olive oil, and salt.  
  3. Drizzle over the vegetables and toss gently.

Mexican Tortilla Salad

When it’s too hot to use the oven or stove, make a meal with a big salad.  Tortilla chips add a bit of crunch.


  • 1 red bell pepper, sliced thin
  • 1 poblano pepper, chopped and seeded (or a green bell pepper)
  • 4 green onions, sliced (white and light green part only)
  • 2 carrots, grated
  • 3 cups lettuce, cut into bite-size pieces
  • ¼ cup apple juice or orange juice
  • 2 tablespoons fresh lime juice
  • ½ cup cilantro leaves, chopped
  • 1 tablespoon olive oil


  1. Combine the vegetables in a large mixing bowl.
  2. In a small bowl mix the apple or orange juice, lime juice and olive oil.
  3. Drizzle over the salad and toss gently.
